
Celebrate the fall season with the popular pumpkin! With more than 250 varieties, there’s a glorious gourd for your palate. Try this warm, savory pumpkin dish on your next Meatless Monday, and don’t forget to save the seeds for an added delicious snack.
STORAGE: Store in a cool, dry place or process and freeze.
PREPARATION: Rinse in cold water, remove the top and scoop out the seeds. Cut into smaller pieces and bake, boil, or steam. Remove the peel after cooking.

RECIPE: Vegan Pumpkin Chilli

INGREDIENTS
- 1 small yellow or white onion diced
- 1 cup bell peppers deseeded and diced
- 1 cup baby bella mushrooms sliced or diced
- 3 garlic cloves minced
- 15 ounces of canned corn
- 15 ounces of canned red kidney beans
- 15 ounces of pumpkin puree
- 28 ounces diced tomatoes
- 2 cups vegetable broth or water
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 to 1 teaspoon of ground cinnamon optional
- Olive oil optional
INSTRUCTIONS
- Warm oil in a large pot over medium heat. Add the bell peppers, mushrooms, and onions. Sauté until tender, about 5 to 7 minutes. Add the garlic and cook for another 30 seconds.
- Add the spices. Toss until the vegetables are fully coated.
- Add the remaining ingredients to the pot. Mix well.
- Simmer for 35 to 40 minutes, until the liquid is thick and reduced. Keep in mind that the liquid will thicken as the chili cools.
Notes
- Feel free to use your favorite beans or a combination of vegetables.
- Be sure to use pumpkin puree, not pumpkin pie filling.
- Serve this pumpkin chili with bread, crackers, or tortilla chips.
