Veggie of the Month: Endive

Try endive in your next salad or appetizer. Endive is a nutritious, leafy green that, when raw, is crisp and bitter. However, endive’s sharp flavor softens into a mellow, nutty sweetness when cooked.

SEASONALITY: Winter

STORAGE: In crisper drawer (low humidity)

PREPARATION: First remove the outer “bad” leaves, then slice horizontally. Rinse well.

COOKING METHODS: Raw and use in salads or as “boats” for dips or fillings. Grill them up or roast them on the stove.

TIPS FOR USE: When it comes to endive salads, pair with sweet toppings to bring out those sweet and nutty undertones (pine nuts, dried cranberries, glazed pecans, apples, pears).  Easily sauté endive by cutting the heads into quarters are searing them on the stove. Top with a sugar and vinegar glaze, balsamic, and pepper. Or roasting endive removes some of that bitter bite and brings out more of the sweet flavors.

Apple Walnut Salad with Endive

INGREDIENTS

  • 2 Granny Smith or other tart apple (peeled and cubed)
  • 2 cup spinach
  • 1 cup endive (sliced)
  • 1/4 cup walnuts (chopped)
  • 3 tbsp bleu cheese (crumbled
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon Mustard
  • 1/2 tsp honey
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chives (minced)

DIRECTIONS

  1. In a large bowl, toss the apples, spinach, endive, walnuts, and blue cheese to combine.
  2. In a small bowl, whisk together the vinegar, lemon juice, mustard, and honey. Add the oil in a thin stream, whisking to emulsify. Whisk in the salt and pepper.
  3. Pour the dressing on the salad and toss gently. Place the salad in a serving bowl and sprinkle with the chives.
